Course Description
Do you want to know what it takes to keep a small healthy herd on the land and produce nourishing and delicious food such as cheese and ice-cream?
Join us at Síolta Chroí and explore regenerative small-scale dairy production, cheese-making, and more with Gyspy from Leitrim Hill Creamery, a small holding goat farm and creamery in Drumcong, County Leitrim, making small batch artisanal raw milk cheeses utilising milk from their own herd of goats as well as milk from partner farmers in the region. We recently hosted a farm visit at their farm and witnessed the love and passion this family have for their craft, their animals, the land, as well as sharing their knowledge. We’re delighted and excited to have Gypsy join us. This is a really great opportunity to take the first step toward knowing more about small-scale dairy farming, or to deepen your existing knowledge on dairy farming and/or making milk into delicious products.
