What does it take to produce truly local, nourishing food — from healthy animals and healthy soil to a delicious piece of cheese?

Join us at Síolta Chroí for a fascinating one-day introduction to small-scale regenerative dairy farming, cheese-making and food production, led by Gypsy from Leitrim Hill Creamery.

Gypsy and her family run a smallholding goat farm and creamery in Drumcong, Co. Leitrim, producing small-batch artisanal raw-milk cheeses using milk from their own herd and partner farmers in the region.

This is a day for anyone who loves good food and wants to understand more about where it comes from.

Join us at Síolta Chroí and explore regenerative small-scale dairy production, cheese-making, and more with Gyspy from Leitrim Hill Creamery, a small holding goat farm and creamery in Drumcong, County Leitrim, making small batch artisanal raw milk cheeses utilising milk from their own herd of goats as well as milk from partner farmers in the region.

We recently hosted a farm visit at their farm and witnessed the love and passion this family have for their craft, their animals, the land, as well as sharing their knowledge. We’re delighted and excited to have Gypsy join us. This is a really great opportunity to take the first step toward knowing more about small-scale dairy farming, or to deepen your existing knowledge on dairy farming and/or making milk into delicious products such as cheese and ice-cream.

Whether you’re a passionate foodie, a keen home cook, interested in starting a small dairy enterprise, or simply curious about how we can produce delicious food while caring for animals, farmers and the land, this day is an opportunity to learn, taste and ask questions.

Come spend a day getting closer to the source of your food — and discovering what’s possible on a small scale.
